Usually the Adobos we ate comes with a sauce. However, we Bisaya have a variety wherein it does not have a sauce and its somewhat crispy. Add couple of labuyo on it and you have a spicy adobo version of it. Enjoy~
Ingredients:
- 1 kilo Pork Ribs, cut into individual pieces
- 2 tsp Salt
- 2 tsp ground Black Peppercorns
- 8 gloves Garlic, finely chopped
- 1 cup Cider Vinegar
- 1 tbsp Soy Sauce
- 3 pieces Bay Leaves
- 3 tbsp Brown Sugar
- 3 pieces Bird's Eye Chili, chopped
- 1/2 cup water
- 1/4 cup Cooking Oil
- AJI-Ginisa Mix
Cooking Procedure:
- Season ribs with salt.
- Combine peppercorns and garlic in a bowl and mash together with spoon. Then rub the mixture to the ribs.
- Pour in the soy sauce, vinegar, bay leaves, sugar, seasoning mix and chili over ribs and marinate at least an hour.
- Drain ribs, with marinate set aside. Then transfer ribs in large pan and add water.
- Bring mixture to boil, then reduce fire and let simmer until pork becomes tender.
- Uncover and let sauce dry. Scrape the reddish brown residue on your pan, then stir the meat.
- When almost dry pour oil, then brown the meat slightly..
- Serve with hot rice.
