Adobong Bisaya




Usually the Adobos we ate comes with a sauce. However, we Bisaya have a variety wherein it does not have a sauce and its somewhat crispy. Add couple of labuyo on it and you have a spicy adobo version of it. Enjoy~


Ingredients:
  • 1 kilo Pork Ribs, cut into individual pieces
  • 2 tsp Salt
  • 2 tsp ground Black Peppercorns
  • 8 gloves Garlic, finely chopped
  • 1 cup Cider Vinegar
  • 1 tbsp Soy Sauce
  • 3 pieces Bay Leaves
  • 3 tbsp Brown Sugar
  • 3 pieces Bird's Eye Chili, chopped
  • 1/2 cup water
  • 1/4 cup Cooking Oil
  • AJI-Ginisa Mix

Cooking Procedure:

  1. Season ribs with salt.
  2. Combine peppercorns and garlic in a bowl and mash together with spoon. Then rub the mixture to the ribs.
  3. Pour in the soy sauce, vinegar, bay leaves, sugar, seasoning mix and chili over ribs and marinate at least an hour.
  4. Drain ribs, with marinate set aside. Then transfer ribs in large pan and add water.
  5. Bring mixture to boil, then reduce fire and let simmer until pork becomes tender.
  6. Uncover and let sauce dry. Scrape the reddish brown residue on your pan, then stir the meat.
  7. When almost dry pour oil, then brown the meat slightly..
  8. Serve with hot rice.
