Had this one prepared in time for Christmas. I just love making Leche Flan not only because its a lot easier to make, but also my kids love it very much.
Ingredients:
- 10 large Eggs
- 1 can (300 mL) Condensed Milk
- 1 cup Evaporated Milk
- 1 tsp Vanilla Extract (or Calamansi juice as an alternative)
- 1 cup granulated sugar (for the caramel toppings)
- 4 traditional molds (Llanera)
Cooking Procedure:
- Separate egg yolks from egg white, will be using the egg yolks only.
- Place egg yolks in a bowl then mix using beater.
- Add condensed milk then mix again.
- Pour in evaporated milk and vanilla extract then mix well. Set aside.
- Melt sugar in a sauce pan. Then pour into your individual molds and distribute evenly on the bottom of the mold.
- Then pour in milk mixture (three-quarters full) into prepared mold.
- Cover each mold with foil and arrange into your steamer.
- Steam for 45 minutes to an hour until set.
- Remove from steamer and let the temperature cool down then refrigerate.
Tips:
- To check if already done, insert toothpick in the middle of the leche flan mixture. If comes out clean then it is already cooked. Otherwise, let it steam for a minute or so.
