My kids were in for a treat here. It's a must for them to order pancakes whenever we sometimes eat breakfast on a fast food chain. But this menu is only available during breakfast periods. So with this there's no time frame. They could eat this any time of the day.
Ingredients:
- 1 cup All-Purpose Flour
- 1 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 2 tbsp Sugar
- 1 cup Evaporated Milk
- 1/4 tsp Vanilla Extract
- 2 tbsp Unsalted Butter (melted)
- 1 large Egg
Cooking Procedure:
- In a large bowl, whisk together dry-ingredients: flour, baking powder, salt and sugar.
- In a separate bowl whisk together wet-ingredients: egg, milk, butter and vanilla extract.
- Make a well in the dry mixture, then pour in the wet mixture all at once and stir until well combined.
- Brush frying pan with melted butter or margarine then pour about 1/4 cup pancake batter into the hot pan.
- When the bottom of the pancakes are brown and bubbles starts to appear on the top surface, turn over.
- Cook until lightly browned.
- Serve immediately with butter and maple syrup.
Tips:
- Do not over mix the batter or the pancakes will be tough. The batter should have some small lumps.
