Classic Pancake

My kids were in for a treat here. It's a must for them to order pancakes whenever we sometimes eat breakfast on a fast food chain. But this menu is only available during breakfast periods. So with this there's no time frame. They could eat this any time of the day.

Ingredients:
  • 1 cup All-Purpose Flour
  • 1 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 2 tbsp Sugar
  • 1 cup Evaporated Milk
  • 1/4 tsp Vanilla Extract
  • 2 tbsp Unsalted Butter (melted)
  • 1 large Egg

Cooking Procedure:
  1. In a large bowl, whisk together dry-ingredients: flour, baking powder, salt and sugar.
  2. In a separate bowl whisk together wet-ingredients: egg, milk, butter and vanilla extract.
  3. Make a well in the dry mixture, then pour in the wet mixture all at once and stir until well combined.
  4. Brush frying pan with melted butter or margarine then pour about 1/4 cup pancake batter into the hot pan.
  5. When the bottom of the pancakes are brown and bubbles starts to appear on the top surface, turn over.
  6. Cook until lightly browned.
  7. Serve immediately with butter and maple syrup.
Tips:
  • Do not over mix the batter or the pancakes will be tough. The batter should have some small lumps.
