Mango Sago



Any dessert with mango on it, is mine for the taking. Its my favorite fruit as you can see. Serving this after an heavy meal, just soothes your feeling. Although eating too much could add to an already hot and humid atmosphere.


Ingredients:
  • 4 ripe Mangoes (cubed)
  • 1 cup Mango Juice
  • 1/4 cup Evaporated Milk
  • 1/4 cup Coconut Milk
  • 3 tbsp Sugar
  • 1 cup small Sago pearls (cooked)
  • 2 pcs Pandan leaves

Cooking Procedure:

Cooking the Sago
  1. Boil water with pandan leaves in a saucepan and add the sago pearls.
  2. Boil the sago to cook for about 5 minutes.
  3. Cover the saucepan and let stand for 30 minutes.
  4. Run cold running water on the sago to cool and drain sago in a colander.
Making the Mango Sago
  1. Chop the flesh of the 4 ripe mangoes into cubes. Transfer half of the mango cubes to a bowl and set aside.
  2. Combine remaining mango cubes, mango juice, coconut milk, evaporated milk and sugar in a blender.
  3. Puree mixture until slightly thick then transfer to a mixing bowl.
  4. In a separate container, add the reserved mango cubes, cooked sago and the mango puree. Mix using spatula until well combined.
  5. Cover and refrigerate until ready to serve.

Tips:
  • Run cold water on the sago after boiling to cool the sago and keep the sago from being overcooked.
