Buko Pandan Juice



Kids just love drinks with milk on it. And this one is on the top of my list. And I'm sure your Christmas or birthday celebration would not be complete without serving this ice-cold buko pandan drink.


Ingredients:
  • 1 can Evaporated Milk (or 2 cups Coconut Milk)
  • 1 can Condensed Milk
  • 4 cups Coconut Juice
  • 2 cups young shredded Coconut
  • 1 cup small Sago pearls (cooked)
  • 1 cup Sugar
  • 1 sachet Gelatin powder
  • 4-6 pcs Pandan leaves

Cooking Procedure:

Cooking the Sago
  1. Boil water with pandan leaves in a saucepan and add the sago pearls.
  2. Boil the sago to cook for about 5 minutes.
  3. Cover the saucepan and let stand for 30 minutes.
  4. Run cold running water on the sago to cool and drain sago in a colander.
Cooking Gulaman
  1. Boil 6 cups of water with pandan leaves in a pot.
  2. Once boiled, turn-off heat then remove the pandan leaves.
  3. Add the gelatin powder, mix to dissolve well.
  4. Turn the heat on and boil for 2 minutes.
  5. Transfer the liquid to molder.
  6. Let it cool then put in the fridge until it becomes a jelly
Putting it all together
  1. In a large pither, combine coconut juice, coconut milk and condensed milk. Stir until well blended.
  2. Add sago, coconut strips and gulaman cubes.
  3. Cover and chill in the fridge before serving.

Tips:
  • Run cold water on the sago after boiling to cool the sago and keep the sago from being overcooked.
