Arroz ala Valenciana




This recipe is famous not only because it taste really really good. But this is most likely served as "pulutan" by most of our brave drinking men and women. I love this along with my favorite wine on the glass.


Ingredients:
  • 1/2 kilo Pork Liempo (sliced thinly)
  • 1/2 kilo Chicken legs or wings
  • 1/2 cup Malagkit
  • 1 cup Jasmine rice
  • 1/2 kilo Shrimp, cleaned
  • 1/2 kilo Mussels (Tahong)
  • 1/2 kilo Squid, cleaned
  • 1 cup sliced Hotdog
  • 1/2 cup Tomato Sauce
  • 1/2 cup Catsup
  • 1/4 cup Margarine
  • 1 cup Coconut Milk
  • 2 boiled Eggs
  • 2 medium Tomato, diced
  • 1 medium Onion, diced
  • 3 gloves Garlic, crushed
  • 1/2 cup Raisins
  • 1/2 cup Green Peas
  • 1 tsp Paprika
  • 1 tsp Turmeric powder
  • 1 medium red Bell Pepper, cut into strips


Cooking Procedure:

  1. Combine Malagkit and Jasmine rice. Wash with water twice and then drain. Set aside.
  2. Boil together pork and chicken in a cooking pot for 15 minutes. Drain meat and set aside the liquid.
  3. In another cooking pot, boil together mussels and shrimp for 15 minutes. Drain seafoods and set aside the liquid.
  4. Heat oil in a wide pan then add margarine. Saute tomato, then drop garlic and onion when tomato becomes soft.
  5. Then add in meat and seafood. Cook for 2 minutes.
  6. Add in salt, pepper and paprika. Stir.
  7. Pour-in meat and seafood broth and coconut milk. Stir and let boil.
  8. Add in tomato sauce and ketchup. Stir. 
  9. Add in the washed rice. Stir. Cover and simmer until the rice is cooked.
  10. Add in turmeric, raisins and green peas. Stir and cover and let simmer for 5 minutes.
  11. Add in red bell pepper. Continue to simmer until the rice is fully cooked.
  12. Garnish with sliced boiled egg. Then serve while still hot.

Tips:
  • Once rice is already added. Stir every 5 minutes to mix fully the flavor and avoid burning the rice and other ingredients.
